THE PRODUCTION
WASHING AND WEEDING
The washing is important to make the fruits clean;
they are also weeded in order to free them from leaves and
twigs.
GRINDING AND PRESSING
Today olive oil is still very similarly gained as it has
been gained since thousands of years.
The production method consists in grinding the olives,
stirring or kneading the paste and finally gaining the oil
through pressing.
The pulps and the stone can be crushed in the mill by the
granite millstones or by more modern and faster olive
presses made up of hammers.
Through the kneading the paste is gently stirred in
order to break the emulsions of oil and water that are
formed while grinding. This will help the final pressing.
